3 stalks Lucinda’s® Fresh Lemon Grass

2 Tbsp. Extra Virgin Olive Oil

1 Shallot, minced

2 Tbsp. Lemon Juice

1/4 tsp. Garlic, minced

1/8 tsp. Lemon Zest

1/8 tsp. Coriander, ground

2 Medium Tomatoes (yellow if available), sliced crosswise

8-10 Cherry or Teardrop Tomatoes


Thinly slice the bulb portion of the lemon grass and mince. In a small bowl, whisk together lemon grass, oil, shallot, lemon juice, garlic, zest and coriander. Arrange tomato slices on a platter and spoon dressing over them. Let stand for 30 minutes at room temperature, then garnish with smaller tomatoes.
