2 garlic cloves
1/4 cup pine nuts, toasted
1 bunch cilantro leaves
1/4 cup sun-dried tomatoes, grated
2 tablespoons olive oil
salt and pepper, to taste
Place the cucumbers, red onion, and mint in a medium-large bowl. Whisk the lime juice and olive oil together.
Stir in the honey.
Season with salt and pepper.
Toss with cucumber mixture, garnish with mint leaves, and serve.
