PUMPKIN SEED PESTO

2 garlic cloves

1/4 cup pumpkin seeds, roasted

1 bunch cilantro leaves

1/2 cup italian parsley leaves

1/3 cup Pm mesan cheese, grated

1 tablespoon lime juice

3 tablespoons olive oil salt and pepper, to taste

 

Process the garlic, pumpkin seeds, cilantro, and parsley together using a food processor or by hand, into a paste.

Add the cheese, lime juice, and olive oil, a little at a time, until well blended. Add salt and pepper. Yield: 3/4 cup
