POTATO SALAD WITH DILL AND CHIVES

4 Medium Potatoes

2Tbsp. Onion, chopped

1 Tbsp. Lucinda’s® Fresh Italian Parsley

1 Tbsp. Lucinda’s® Fresh Chives, chopped

1 Tbsp. Lucinda’s® Fresh Dill Leaves (not stems) chopped

3 Tbsp. Mayonnaise

1 Tbsp. Cream or Yogurt

 

Boil potatoes in their skins until tender. Cool, peel and slice them. Sprinkle the onion, parsley, chives and dill onto the potatoes. Blend mayonnaise and cream, season with salt and pepper. Add to the potato mixture and stir gently. Let stand a few hours so the flavors mingle. Salt and pepper to taste.

Makes 4 servings.
