POTATO GARLIC SOUP WITH CHIVES

8 cloves Garlic, peeled

8 cups Chicken Broth

2 lbs. Potatoes, cut into bite-size pieces

1/2 cup Lucinda’s® Fresh Chives, chopped

1/2 tsp. Salt

1/4 tsp. White Pepper

1/4 cup Lucinda’s® Fresh Italian Parsley, chopped

2 cups Milk

2 tsp. Lemon Zest

1/4 cup Additional Chives, chopped

 

In a kettle, combine first 7 ingredients. Bring to a boil then lower heat and simmer partly covered for 30 minutes. With a slotted spoon, transfer solid ingredients to a food processor and blend until smooth. Return processed mixture to pot, stir in milk and heat through. Ladle into bowls and sprinkle with remaining chives and lemon zest.
