ORANGE-ROSEMARY GREMOLATA

2 tablespoons rosemary, minced

1 tablespoon fresh orange zest, grated

1 garlic clove, minced

2 tablespoons olive oil

salt and pepper, to taste

 

Combine the parsley, rosemary, orange zest, garlic and olive oil in a food processor until finely chopped. Season with salt and pepper and sprinkle over roasted vegetables, broiled fish or chicken, bean dishes and thick soups.

Garnish with rosemary sprigs.
