MINTED TOMATO SALAD

2 cloves Garlic, crushed

3 Tbsp. Extra Virgin Olive Oil

1 Tbsp. Balsamic Vinegar

4 Medium Tomatoes, quartered

1/2 cup Lucinda’s® Fresh Mint Leaves, chopped

 

Whisk together first 3 ingredients in bowl. Drizzle dressing over tomatoes and sprinkle with the mint. Let the tomatoes stand at room temperature for a half hour. Serve with slices of fresh, crusty bread.
