3/4 pound fresh lychees, shelled
juice of half a lime, (1 tablespoon)
1 1/3 ounces crystallized ginger, diced
fresh mint leaves, for garnish
Peel the lychees and place them in a medium-sized bowl. Drizzle with lime juice .
Add the diced ginger (reserving some for garnish) and toss until well mixed.
Place in clear glass or footed bowls and garnish with mint and reserved crystallized ginger.
