3/4 cup diakon radish sticks
3/4 cup carrots
3/4 cup red bell pepper, thinly sliced
1/2 cup red onion, thinly sliced
salt and pepper, to taste
2 tablespoons soy sauce
1 tablespoon wine vinegar
1 tablespoon fresh ginger, grated
2 tablespoons peanut ol
1 tablespoon sesame oil
1 tablespoon toasted sesame seeds, for garnish
Slice the daikon radish and carrots into thin matchsticks and place in a large bowl..
In a small bowl, whisk together the soy sauce, vinegar, ginger, peanut oil and sesame oil.
Toss all the vegetables in the bowl with the Asian dressing, and season to taste with salt and pepper.
Top with toasted sesame seeds.
