1 package jicama sticks, cubed 3/8″
3/4 cup cucumber (green skin on), cubed 3/8″
3/4 cup red bell pepper, cubed 3/8″
1/2 cup red onion, cubed 3/8″
juice of one lime
3 tablespoons olive oil
1/4 cup cilantro, chopped salt and pepper, to taste
Cube the jicama sticks. (about 3/8″)
Cut the cucumber and red bell pepper into strips the size of the jicama and then cube them. Place jicama, cucumber, red bell pepper, and red onion in salad bowl.
In a small bowl, whisk ; lime juice, salt and pepper. Add the oil in a steady stream, whisking constantly. Add dressing and cilantro to bowl, tossing gently.
