1 15 oz. can chickpeas, rinse and drained
1/2 small onion, thinly sliced
1 medium ripe tomatoe, diced
6 each olives, Kalamata or Nicoise, pitted and halved
salt and pepper, to taste
1 tablespoon lemon juice
2 tablespoons olive oil
1/4 cup fresh mint, chopped package frozenJava beans
Mix the chickpeas with the onions, tomatoes and olives.
Season with salt, pepper, and lemon juice. Toss with the olive oil. Mix with fresh mint and serve.
