BLACK BEAN SOUP WITH CILANTRO

1 tablespoon olive oil

1/2 cup onion, chopped

2 garlic cloves, minced

1/2 seeded jalapeno chile pepper, optional

1 15 oz. can black beans, rinsed and drained

1 cup water or broth, veg. or chicken

2 tablespoons cilantro leaves, chopped salt and pepper, to taste GARNISHES, optional

 

Heat olive in a medium saucepan. Add onion, garlic and jalapefio pepper and saute for a few minutes. Add beans and broth..

Cook a few minutes to blend flavors. Add cilanto leaves.

Puree the soup with a hand-held blender, partially leaving some whole beans for texture, or pour half the soup into a blender, puree and add back to the soup pot.

Seaason with salt and pepper, to taste.

Ladle the soup into bowls and serve with garnishes, if desired.

NOTE: Garnish with more cilantro leaves raw onion, shredded cheese, diced tomato and/or a dollop of sour cream.
