BLACK BEAN AND JICAMA SALAD

1 can black beans, 1 pound, drained and rinsed

1 cup jicama, 3” sticks

¼ cup feta cheese

DRESSING

Juice of 1 line

1 tablespoon honey

pinch of crushed red pepper flakes

1/4 cup cilantro, chopped

2 green onions, thinly sliced

 

Combine the black beans, jicama, and feta cheese.

Whisk the lime juice and honey together with the crushed red pepper flakes. Add the cilantro and green onions.

Toss dressing with the black beans, jicama, and feta cheese, gently and serve. Can be refrigerated up to 4 hours.
